Chocolate and Mandarin Crispy Cake Bars

Here’s the recipe for today’s BBC Radio Leicester cakes. I always take some home made cakes in each week for the Sunday staff. Our gardening programme is on at lunchtimes and we all get very hungry.

This week’s recipe has the addition of some mandarins from the greenhouse. Add some zest to the mixture and place mandarin segments on top before the chocolate sets. Quite delicious for a cold wet day. You could also add Terry’s Chocolate Orange segments if you like.

My cakes and home made treats relate to what I’m growing in the garden. This week I was talking about starting to water my citrus trees, feeding them and looking under the leaves for scale insects. You can sometimes find little flat insects attached to the leaves, and there might be black mould as well which is caused by their sugary excretions. You can scrape the scale insects off with a damp loofah sponge. Use horticultural soft soap to clean off the mould.

  1. Karen your chocolate bars and crunchy tangerines look delicious. Thanks for the advice on the reverse of the leaves and how to clean them. The photo of the citrus flower is divine and must smell beautifully. I was very worried about you. The storms that have hit the UK a week apart, Ciara and Dennis, scared me a lot and made me wonder if you would be safe. In the news of Spain they said there were floods, power outages, missing and even dead. I hope that all your family and you nothing happened to you and you are safe; and that your houses have not been flooded. Hopefully your garden has not suffered major damage and is not very waterlogged. I know Dennis left the rain for a whole month in 48 hours. An atrocity. But the impotence is you, my dear friend. I send you all my support and my love so that you can return to normal as soon as possible.     • Thank you Mike. They are just what’s needed to cheer us up after all this terrible weather. Hope your plot has escaped any damage. I’ve lost a tree, and the whole garden is covered in twigs and debris. I’m not going to tackle it until these high winds die down. Have a good week. Karen x
